Taste the Typical Dishes of Bergamo: The New Traditional Menu


We welcome the fall season with a menu that satisfies not only palates, but the hearts of the people of Bergamo. The Traditional Menu highlights the traditional food of Bergamo and celebrates our territory.

A fixed price of 29€ includes Polenta Taragna, Casoncelli alla Bergamasca, Rabbit alla Bergamasca, and for dessert, our delight, the Donizetti Cake.

These are the traditional dishes of Bergamo. Polenta Taragna is made with local products like renowned cheese from Branzi and salami.

Casoncelli alla Bergamasca are a type of ravioli filled with meat. It is the most popular first course from Bergamo, dressed in butter, sage, and local pancetta, similar to bacon. At Balzer, as always, we create elevated dishes – you’ll find a delicate wafer of parmesan atop the dish, like a crown.

Our Traditional Menu offers a hearty second course: rabbit cooked to perfection with oven-roasted potatoes to fill you up.

Lastly, the part you should never be without – dessert. We can’t create a traditional menu without including the Donizetti cake, the dessert that best represents Bergamo. This cake, delicate but flavorful, is accompanied with a rich flambé cream.
